After college, marriage, and two years in the Peace Corps in Ghana, West Africa, David went to graduate school at Rensselaer Polytechnic Institute in physics earning a Ph.D. Since 1974, when gas was hard to come by, David has researched, lived and taught solar energy–the only sustainable energy resource for life on this planet. Since 1982 he and his family have lived in a solar house that gets 85% of its energy from the sun, and they generate 30% more electricity than they use which they sell back to the grid. Besides vegetable gardening, they grow some berries and fruit and nut trees. David’s work with old and new buildings has demonstrated how homeowners can become carbon-neutral and energy-positive, living better with sunshine. David teaches “Solar Devices and Energy” at Rensselaer Polytechnic Institute in Troy, NY and consults on solar energy buildings, boats, and projects.

Maribeth Abrams, MS is a Certified Nutritional Consultant, Certified Lifestyle Educator, Spokesperson for the North American Vegetarian Society, and author of The Four Ingredient Vegan and Tofu 1-2-3. Known for her enthusiastic demeanor, she has appeared on radio and television and hosts a cooking DVD with former Olympic athlete Carl Lewis.
Maribeth provides individual and corporate-level nutrition counseling through her company Health Harmony and holds degrees from Emory University and Georgia State University. Most people who follow the “healthy version of the Standard American Diet” (e.g. low-fat dairy and grilled chicken instead of beef) struggle with excess weight, high cholesterol, and even heart disease, diabetes, osteoporosis and cancer. Think diet doesn’t make a difference when it comes to health? Open yourself up to the facts and discover how and why the conventional wisdom that we’ve been “fed” since childhood just doesn’t work, and how a plant-based diet not only helps to prevent and reverse disease but also makes us feel better than we ever knew possible.

Cookin’ Easy: New Everyday Favorites With Just Four Ingredients

Many delicious, vegan foods can be prepared with only four ingredients. Think that’s not possible? Tasting is believing. Four favorites will be made before your eyes, each in just a few minutes flat. Plus, you’ll get an overview of many others to try at home. Samples will be provided.

International speaker and certified holistic health counselor, Victoria serves as a special guest at events and conferences. She holds a degree in comparative religions and did graduate work on the spirituality of daily life in India and Tibet. She (www.victoriamoran.com) is the author of ten groundbreaking books addressing veganism and spirituality. Has appeared as a guest on The Oprah Show, Today Show, Good Morning America Now, Fox Strategy Room, and NPR’s All Things Considered. A vegan of twenty-seven years, Victoria wrote the 1985 Compassion the Ultimate Ethic: An Exploration of Veganism – her first book and the first full-length book on vegan living ever published. Nine additional books have followed, including best-selling Creating a Charmed Life (in 29 languages and quoted on boxes of Celestial Seasonings teas), and the essential vegan weight loss guide, The Love-Powered Diet: Eating for Freedom, Health, & Joy. Other titles include Lit from Within, Shelter for the Spirit, Fat, Broke & Lonely No More, and Younger by the Day. Coming in 2012: The Vegan Life: Everything You Need to Know to Eat Healthfully & Live Compassionately in the Real World. Though many may infer a relationship between veganism and weight loss, Victoria Moran makes the important connection between compassion for animals, a healthy spirit, and a healthy body. Victoria has written for Yoga Journal, Mothering, Natural Health, Woman’s Day, Body & Soul, and Vegetarian Times. Hosts the “Veg and the City” show on HealthyLife.net Radio, and writes the “Veg and the City” blog for the Huffington Post.
